Khinkali Dumplings
Khinkali are traditional Georgian boiled dumplings filled with spiced beef and herbs, served with a side of tangy tkemali sauce and a sprinkle of fresh cilantro. This hearty and flavorful dish is a staple in Georgian cuisine, perfect for a family dinner. The combination of ground beef, onions, garlic, and a blend of spices creates a rich and savory filling, while the tkemali sauce adds a tangy and refreshing contrast.
Ingredients
- 1 ¼ lb ground beef
- 2 diced yellow onion
- 4 cloves minced garlic cloves
- ½ tsp black pepper
- 1 cup tkemali sauce
- 1 cup pickled vegetables
- ¼ cup fresh cilantro
- ½ tsp ground coriander
- 1 tsp ground cumin
- 1 cup chopped fresh dill
- 2 ½ cup all-purpose flour
- 1 cup chopped fresh parsley
- 1 tsp salt
- ¾ cup warm water

To make the dumpling dough, combine 2.5 cups all-purpose flour and 0.75 cup warm water in a large bowl. Mix until a dough forms, then knead for 5-7 minutes until smooth. Cover and let rest for 30 minutes.

For the dumpling filling, combine 1.25 lb ground beef, 2 diced yellow onions, 4 minced garlic cloves, 1 cup chopped fresh parsley, 1 cup chopped fresh dill, 1 tsp ground cumin, 0.5 tsp ground coriander, 1 tsp salt, and 0.5 tsp black pepper in a large bowl. Mix well until just combined.

Divide the rested dough into 20-25 equal pieces. Roll each piece into a ball and then flatten into a thin circle, about 3-4 inches in diameter. Place 1-2 tbsp of the dumpling filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape, and press the edges together to seal.

Bring a large pot of salted water to a boil. Carefully add the dumplings to the pot and cook for 10-15 minutes, or until they float to the surface.

Serve the khinkali dumplings hot with 1 cup tkemali sauce, 0.25 cup chopped fresh cilantro, and 1 cup pickled vegetables on the side.
