Tkemali Sauce
A traditional Georgian condiment made with sour plums, garlic, and herbs. This tangy and slightly sweet sauce is perfect for grilled meats, vegetables, or as a dip for khinkali dumplings.
Ingredients
- 1 ½ cup sour plums
- 6 cloves garlic cloves
- ¼ cup fresh cilantro
- ¼ cup fresh dill
- ½ tsp salt
- ½ cup water

Step 1
Rinse the sour plums and remove any stems or leaves. Place them in a medium saucepan with 0.5 cup water. Bring to a boil over medium heat, then reduce heat to low and simmer for 15-20 minutes, or until the plums are soft and the liquid has reduced slightly.

While the plums are cooking, mince the garlic cloves and chop the fresh dill and cilantro.

Once the plums are cooked, remove the saucepan from the heat and let it cool slightly. Add the minced garlic, chopped dill, and chopped cilantro to the saucepan. Season with 0.5 tsp salt.

Blend the mixture in a blender or food processor until smooth. Strain the sauce through a fine-mesh sieve to remove any solids and achieve a smooth consistency.
