Ingredients
- 5 fillets cod
- 1 cup olive oil
- 2 cup masa harina
- 1 red cabbage
- ½ red onion
- 1 cup sour cream
- 1 cup cilantro
- ½ cup cornstarch
- 1 cup all-purpose flour
- 2 tbsp lime juice
- 2 tbsp lime juice
- 1 cup warm water
Steps
-
Step 1
In a large bowl, whisk together 1 cup all-purpose flour, 0.5 cup cornstarch, and 1 tsp salt. Gradually add 1 cup cold water, whisking until smooth. Add 2 tbsp lime juice and stir to combine. Cut 5 cod fillets into small pieces and add to the batter, tossing to coat.
-
Step 2
Heat 1 cup olive oil in a large skillet over medium-high heat. Remove cod pieces from batter, letting excess drip off. Fry cod in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
-
Step 3
To make the tortillas, combine 2 cups masa harina and 1 cup warm water in a bowl. Mix until a dough forms. Knead for 5 minutes until smooth. Divide into 10 equal pieces and roll into balls. Flatten each ball into a thin circle using a rolling pin.
-
Step 4
Heat a dry griddle over medium heat. Cook tortillas for 30-45 seconds on each side, until lightly charred and slightly puffed. Repeat with remaining dough.
-
Step 5
For the slaw, shred 1 red cabbage, 0.5 red onion, and 1 cup cilantro. Mix in 2 tbsp lime juice and salt to taste.
-
Step 6
Assemble tacos by placing fried cod on a tortilla, topping with slaw, a dollop of sour cream, and any desired toppings.
