Ingredients

FOR THE CITRUS-MARINATED SHRIMP

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp fresh lime juice 45g
  • 1 tsp fresh orange zest 2g
  • 3 cloves minced garlic cloves 9g
  • 2 tbsp olive oil 27g
  • 1 tsp smoked paprika 2g
  • 1 tsp salt 6g
  • ½ tsp black pepper 1g

FOR THE QUINOA AND BLACK BEAN FILLING

  • 1 cup quinoa 170g
  • 2 cups water 480g
  • 1 cup cooked black beans, rinsed and drained 170g
  • 1 cup diced red bell peppers 150g
  • ¼ cup chopped fresh cilantro 4g

FOR THE ROASTED BELL PEPPERS

  • 4 large large red bell peppers, halved and seeded 960g
  • 1 tbsp olive oil 14g
  • ½ tsp salt 3g

Steps

  1. Step 1

    Rinse quinoa under cold water until water runs clear. Combine quinoa and 2 cups water in a medium saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is fluffy. Remove from heat and let it stand covered for 5 minutes, then fluff with a fork.

    Meanwhile, prepare the citrus marinade by whisking together lime juice, orange zest, minced garlic, olive oil, smoked paprika, salt, and black pepper in a bowl. Add shrimp and toss to coat. Let marinate at room temperature for 15 minutes, stirring occasionally.

    Heat a large skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes per side until shrimp are opaque and cooked through. Remove from heat and chop shrimp into bite-sized pieces.

    In a large bowl, combine cooked quinoa, black beans, diced red bell peppers, chopped cilantro, and chopped shrimp. Adjust seasoning with salt and pepper to taste.
