Ingredients
FOR THE SPINACH
- 170g baby spinach
- 170g mature spinach, stems removed
FOR THE BÉCHAMEL
- 2 tbsp unsalted butter, for roux 28g
- 2 tbsp all-purpose flour 16g
- 120 ml whole milk, hot 120g
FOR THE SAUCE
- 120 ml heavy cream 120g
- 2 cloves shallots, minced 30g
- 2 cloves garlic cloves, minced 6g
- 1 tbsp unsalted butter, for shallots 14g
- 2 tbsp dry sherry 30g
- ⅓ tsp freshly grated nutmeg 1g
- ⅓ tsp white pepper 1g
- 1 tsp kosher salt 5g
FOR THE FINISH
- 30g parmesan, finely grated
- 1 tbsp unsalted butter, cold, for finish 14g

Heat a large pot of salted water to a rolling boil. Blanch the baby and mature spinach together for 60 seconds, then transfer immediately to an ice bath to stop the cooking. Drain, wrap in a clean towel, and wring out all excess moisture. Roughly chop the spinach and set aside.

In a small saucepan, melt unsalted butter over medium heat. Whisk in 2 Tbsp. all‑purpose flour and cook, stirring, for 90 seconds until the mixture turns a pale blonde. Gradually whisk in hot whole milk, then season with half the kosher salt, half the white pepper, and half the nutmeg. Simmer 3–4 minutes until thickened. Set the béchamel aside.
