  • 2 tbsp fresh lime juice 30g

FOR THE CARAMELIZED PINEAPPLE SALSA

  • 2 cups pineapple, peeled and diced 330g
  • ½ red bell pepper, diced 75g
  • ¼ red onion, finely diced 40g
  • 2 tbsp fresh cilantro, chopped 8g
  • 1 tbsp fresh lime juice 15g
  • 1 tsp brown sugar 3g
  • 1 tbsp olive oil 14g

FOR THE COCONUT QUINOA

  • 1 cup quinoa, rinsed 170g
  • 1 cup coconut milk (full fat) 240g
  • 1 cup water 240g
  • ¾ tsp salt 5g
  • ¼ tsp freshly ground black pepper 1g

Steps

  1. Step 1

    Prepare the jerk marinade by combining chopped scallions, fresh thyme leaves, minced garlic, grated ginger, chopped scotch bonnet pepper, ground allspice, cinnamon, nutmeg, brown sugar, soy sauce, lime juice, and olive oil in a blender or food processor. Blend until smooth to form a thick, aromatic paste.

Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
