Giardiniera Potatoes

Ingredients
FOR THE POTATOES
- 2 russet potatoes 400g
- 2 tbsp olive oil 30g
FOR THE GIARDINIERA
- 1 cup giardiniera 240g
- ½ tsp salt 2g
- ¼ tsp black pepper 1g

Step 1
Preheat oven to 425°F. Cut the potatoes into 1-inch wedges. Place them on a baking sheet lined with parchment paper.

Drizzle the potatoes with olive oil and sprinkle with salt and black pepper. Toss to coat evenly.
